Background:
I was born and raised in rainy old England where I lived for 13 years. Before you ask…yes, I drank tea (still do), yes I ate crumpets (absolutely oozing with butter) and no I haven’t personally met the Queen (I know, *tear*). My parents, 3 older siblings and I took the plunge to travel “across the pond” to sunny old Texas in 2007 and it’s been a crazy but awesome life experience, y’all! (sorry, couldn’t resist).
I’m currently 1 year deep into my career as a NICU nurse (dream. come. true) and LOVING every single living moment of it. Ahhh, those sweet babies get me in my feels ♥
Why I started this blog:
The name for my blog actually stemmed from my loooong history of diet fails. You see, dieting has never really been my thing, and one of the main reasons for that is because I love food. Sorry, I forgot to emphasize, I L♥VE FOOD. Because of this, I can’t even count how many times I would embark on yet another “diet”, only for it to end a few hours later with somebody catching me with half of a pizza in my mouth. I would literally just stand there like a deer in the headlights, sauce stain on my shirt, smile and say “uhh…today’s cheat day?” 🙂
So, what I’m really trying to get at with this, is that dieting had me fixed on the idea that I absolutely had to skip out on all of the foods that make me oh so happy, in exchange for truckloads of kale with one tasty treat maybe once every blue moon. As you can see my friends, these diets never ended well.
It wasn’t until I decided to truly embark on a healthier lifestyle journey, that I realized it wasn’t all about cutting out my favorite foods. It was about improvising and substituting. What I’ve learned is that eating healthy absolutely doesn’t have to be boring or torturous…if you’re willing to do a little switcharoo here and there and replace some of those unhealthy ingredients with healthier ones. What’s even better, is that a majority of these healthier substitutes taste just as good, if not even better than the unhealthier ones. With this simple concept, I’ve been able to lose my undesired extra weight, and keep it off! 🙂
Now, by no means am I a health expert, and I totally agree that there are recipes out there that are waaaay healthier than the ones on this here blog. But my ultimate goal is to make a healthier lifestyle approachable for everyone. I absolutely don’t want you to feel as if you need to do an entire pantry makeover and spend big bucks on rare ingredients that you’ll probably only ever use once. I’m going to show you that you can create deliciously healthy recipes, using a majority of everyday pantry ingredients and love doing it!
With an ever-growing army of deliciously healthy recipes, every day will feel like a cheat day!
