This is not a dream people. I repeat. THIS IS NOT A DREAM. What you’re looking at totally happened and it was freaking amazing. Like… SO GOOD. So so good.

So, as you have probably managed to pick up from my recent recipes…my mind is totally in 2017 health nut mode but my sweet tooth is stuck in holiday candy lala land. But you know what, that’s totally okay. We’re working our way around that LIKE A PRO.

I began the month with a batch of No Bake Vegan Samoas to combat my ridiculously demanding sweet tooth cravings and I must say, it worked like a charm. However, my sweet tooth is one that won’t give up. Once you give in a little, it demands more, and it won’t stop until it gets what it wants. IT’S RUTHLESS.

What I have found is that my sweet tooth likes to make a pleasant appearance especially on the days when I actually managed to roll myself to the gym and do something somewhat productive. Monday morning definitely  was one of those days. So with that, here we are with a deliciously easy sweet treat that won’t reverse all of that previous hard work done to burn those cals.

THAT DRIZZLE THO.

In the process of making these parfaits, I came to the sudden realization that parfaits are GREAT. Like, I don’t know what I’ve been doing with my life, but clearly I’ve been doing something wrong because how have parfaits only recently become a thing in my healthy dessert army?! Questions that needs answers asap.

Parfaits are amazing because they are so versatile and an awesome way to get those little flavors from particular sweet treats that you may be craving, but in a healthier way. For all my s’mores lovers out there, I found your fix in under 200 calories. A honey graham base topped with layers of chocolate Greek yog, marshmallows, cool whip lite and a low calorie chocolate drizzle.

Skinny S’mores Parfait

Indulge into these guilt-free s'mores parfaits for a deliciously low calorie sweet fix!

Ingredients

  • 1 cup nonfat Greek yogurt
  • 1 1/2 tbs cocoa powder
  • 1 cup mini marshmallows
  • 3 graham cracker sheets
  • 1 tbs lite maple syrup
  • 2 tbs cool whip lite

Instructions

  1. Begin with pulsing 2 1/2 of the graham cracker sheets in a food processor until they resemble a coarse, sand-like consistency. In a separate bowl, combine the Greek yogurt with 1 tbs of the cocoa powder.
  2. Layer the glasses, alternating between the graham cracker crumbs, Greek yogurt and marshmallows. Preserving approx 1 tbs of the graham cracker crumbs for sprinkling.
  3. To make the chocolate drizzle, combine the maple syrup and remaining 1/2 tbs of the cocoa powder. Top each parfait with 1 tbs each of cool whip lite and drizzle the chocolate syrup. Sprinkle remaining graham cracker crumbs. Split the remaining graham cracker square in half and add to each parfait. Enjoy!
