It's that time of the year... that time of the year where all of my favorite fruits are in season. You guys already know about my serious love for mangoes and don't worry...they'll be back 😉 But for now, I'm going to use this time to brag about another one of my summer season faves....PEACHES! You know how some people like to keep up to date with their favorite stores? For me personally, I have my list of wallet drainers like Forever 21, Charlotte Russe, PINK and Just Fab that I check frequently for any new deals to justify spending my entire paycheck in one day. But, there's another great store that I literally feel like I spend a good 25% of my life in and that's Kroger. Just when I feel like I've shopped enough and I have all the necessary groceries for the week, one click of the Kroger app is all it takes to reel me in.
So, there I was checking out my Kroger weekly ad on my nifty little app when I saw that peaches were on sale this week for $1.99 a pound...I KNOW!! I was a happy little camper so I decided what better way to celebrate this awesome bargain than to incorporate them into a delicious recipe? Behold....these blueberry peach crumble bars. These are another one of my favorite "maybe I'll eat one for breakfast, maybe I'll eat one for dessert or maybe I'll eat them for both because I'm an independent woman who doesn't follow the rules" recipes. I mean these bars are seriously so good I salute anybody who can just eat one in the morning and resist the temptation to dive back in for more later on in the day (if you are one of those rare people, I want your autograph).
I'm usually not one to like cold pies or crumbles, but for some reason these just work. Of course they can be reheated depending on preference, but I like the fact that I can just grab one from the refrigerator in the morning and be on my way out of the door, so convenient.
Can be stored in an air tight container and refrigerated for up to a week. Please note that nutrition values may differ slightly depending on brand of food items used.
