    I feel like I've been blurting out a ton of confessions lately but hey, a little honesty in this little internet home never hurt anyone, right? So with that, here is confession number ... er.. number between 5 and 30? I'm nuts about coconuts. Like forrealssss my love for coconut goes a little beyond the standard level and slightly into the realm of "uh, is this girl okay? Has she like...seen a specialist about this?". It's true, I'm pretty cuckoo for coconuts and I ain't afraid to show it.

    Whenever I'm seriously feeling a certain food that I'm eating (so pretty much everything), I tend to do something a little, uhm... exaggerated, to express my appreciation for the party that is currently taking place in my mouth. I dance. I literally sit there, mouth full of food, and do little happy dances that sort of resemble a cross between a hula girl who's had a few too many and a bobble head car accessory (I know, picture that). Oh, and I also have fun tunes to accompany the moves because just the dancing clearly isn't obnoxious enough. Safe to say, eating with me can take some time to get used to (especially if it's a sushi spot ohmygosh nom) but my friends will tell you, it eventually just becomes routine. Like, so routine that my infectious dance (can we even call it that?) moves will have you doing a little jiggle in your seat too (even if you try to hide it, I see you...work it).

    So, what did that story have to do with these little yummy balls of chocolatey nom? Well, the fact that these little energy bites are packed with avocado, coconut oil, chia seeds, hemp seeds and rich cocoa powder? If you're even still questioning if I did a happy dance when I popped one of these into my mouth, oh you best believe it. I brought my A game.

    Guys, don't let the size fool ya, these little energy bites are superfood madness. If you're ever in need of a serious pick me up in the morning...or an excuse to shove 5 in your mouth and claim it as a "light, healthy snack"...you my people, are at the right place.

    Chocolate Coconut Energy Bites

    Ingredients

    • 1 Avocado, ripe
    • ½ Cup Old Fashioned Oats
    • ½ Cup Dates
    • ¼ Cup Unsweetened Cocoa Powder
    • ¼ Cup Unsweetened Coconut Flakes
    • 1 Tbs Chia Seeds
    • 2 Tbs Hemp Seeds
    • 1 Tbs Unrefined Coconut Oil

    Instructions

    1. Add all of the ingredients to the bowl of a food processor and pulse, scraping the sides periodically, until mixture forms a sticky consistency.
    2. Using a small cookie scoop or tablespoon, scoop out mixture and roll into balls using your hands. Transfer to a baking sheet lined with parchment paper. Refrigerate for 30 minutes to allow bites to harden slightly
