If you have been following my blog for some time now, then it's absolutely no surprise to you that cauliflower happens to be one of my all time favorite vegetables to work with.
Its versatility is simply un-matched. It can be used to make the most intricate dishes, or the simplest of ones. Today, we're erring on the side of SUPER simple (yet, still delicious) with this easy 10 minute Garlic Mashed Cauliflower recipe.
Mashed cauliflower is a great side dish option for my low-cal AND my Keto friends. Whether you're loading it up to make a Loaded Mashed Cauliflower Bake, or simply going at it the old fashioned bowl and spoon style...you cannot go wrong.
While this Garlic Mashed Cauliflower recipe can be made with raw cauliflower, I used a bag of frozen cauliflower rice to cut this process down to 10 minutes start-finish!
If using raw cauliflower, you would simply boil it first to get it soft, then throw it in the food processor and blend until you got that creamy consistency.
If using a bag of cauliflower rice, you'll just nuke it in the microwave for about 5 minutes, then throw in the food processor with the other ingredients and blend until creamy. Ba-da-bing, ba-da-boom.
In addition to the bag of cauliflower rice, this Garlic Mashed Cauliflower uses very few simple ingredients that pack much flavor:
- Minced garlic
- Grated parmesan cheese
- Dried parsley
- Sour cream
- Vegetable oil spread (for creaminess)
I added a little drizzle of olive oil to take the creaminess to the next level but if you wish to truly crack down on the calories, feel free to omit and deduct 120 calories from the total recipe.
Once everything has been fully combined in the food processor, that's literally it. You're done! I keep bags of frozen cauliflower rice in my freezer for this exact reason. I've found it to be a great substitute to not only potatoes, but pasta and rice too in many recipes!
Creamy Garlic Mashed Cauliflower

This easy, 10-minute mashed cauliflower recipe makes the perfect low calories or low carb/keto side dish!
Ingredients
- 12 oz bag cauliflower rice
- 1 tbs minced garlic
- 2 tbs vegetable oil spread
- 1 tbs sour cream
- 2 tbs shredded parmesan
- ½ teaspoon dried parsley
- 1 tbs olive oil
Instructions
- Microwave frozen cauliflower rice according to instructions on bag (usually around 5 minutes). Transfer heated cauliflower rice to food processor.
- Add minced garlic, vegetable oil spread, sour cream, shredded parmesan, dried parsley and olive oil. Blend until a creamy consistency is achieved.
- Serve and enjoy!
