Personal pizzas....with barbecue sauce? Chicken? Pineapples? Honestly, could you even think of a better meal to end your day?
Okay, great. I'm glad we're on the same page because these Hawaiian Barbecue Chicken Pizzas are LIFE. I'm not sure if I've truly made you guys aware of how much I love pizza yet and I feel as if I'd never truly be able to express my love for it until I get a chance to shout it on a billboard somewhere, or just have a banner attached to an airplane saying VICCI [heart]'s PIZZA. Even then, I think that would maybe only scratch the surface of love that I have for that cheesy, saucy, doughy stuff.
The thing that I love most about pizza is the fact that you can put just about ANYTHING on it and you're pretty much guaranteed that it will end up tasting good. Okay, maybe not anything...let's stick to edible food items here, guys. I'm always on the prowl for healthy pizza bases that are 3 things: healthy, easy and quick. So far, I've had tons of luck finding awesome recipes that can be made from scratch, but it's not until recently that I've had any luck finding low calorie, ready made pizza crusts. I can't even count on my fingers how many times I've been disappointed to read a nutrition label claiming to be under 200 calories per serving...until my eye catches the serving size. I'm sorry but I don't call ⅛ of a pizza a serving size, I call that a sample.
However, as I was joyfully walking around Kroger (I don't live there guys, I promise) I found something in the bread section that changed it all! Oroweat has 100 calorie Whole Wheat Pocket Flatbread Thins that if split in half, make the perfect personal size, thin crust pizza bases, FOR ONLY 50 CALORIES! I exercised every bit of self discipline within me to refrain from dropping everything and dancing down the aisles. Instead, I decided to celebrate by making these yummy personal pizzas, and then demolishing one before I even had time to transfer them from the oven to the counter. Safe to say, these pizzas are win and I can't wait to share other great topping combinations with y'all. This you guys, is the beginning of a beautiful pizza friendship.
