    No Bake Peanut Butter Oatmeal Bars

    Hiiii guys and happy happy happy October! I don't know about y'all but I'm so happy that it's finally October. LIKE SO HAPPY.

    I feel like October is literally the best month ever (uhm hello pumpkin spice everything, haunted houses, my birthday!!), it's like.... I just want to start every morning with a huge smile on my face, diving into a pile of Fall colored leaves, ahh.

    Unfortunately, I haven't been posting recipes as frequently as I would have liked to...the college lyfe this semester is no joke guys. Chemistry and I were just not made to be friends, we both came to that mutual decision...but we're just gonna suck it up and push through.

    With very limited time on my hands,  I've been all about the quick, super easy snacks that I can just throw together and chomp down between lab quizzes and crying. These No Bake Peanut Butter Oatmeal Bars have been an actual lifesaver.

    These bars could honestly not get any easier. We're talkin' 5 ingredients (choc chips optional) and 5 minutes of hands on time. The type of easy that almost makes the act of getting in the car, driving to the nearest grocery store and purchasing a box of granola bars seem like a chore. Healthy snacking doesn't have to be that hard friends, I promise!

    What I love most about these No Bake Peanut Butter Oatmeal bars (besides the insanely short and simple ingredients list) is the fact that they are refined sugar free (if you omit the optional chocolate chips), making them perfect for your clean eating needs. The dates in these act perfectly as a deliciously natural sweetener. They can also be made gluten free by opting for gluten free oats aaaaand they're vegan!

    Long story short, they're an overall winner and need to make themselves at home in your refrigerator pronto.

    No Bake Peanut Butter Oatmeal Bars

    These deliciously easy, 5 ingredient No Bake Peanut Butter Oatmeal Bars are the perfect clean-eating pick me up snack. Gluten free and vegan!

    Ingredients

    • 1 ½ cups old fashioned oats
    • 1 cup pitted dates
    • ½ cup PB Fit powder
    • ¼ cup coconut oil, melted
    • ¼ cup water
    • ¼ cup chocolate chips (optional)

    Instructions

    1. Add the oats, dates, PB Fit powder and coconut oil to the bowl of a food processor and pulse until the mixture resembles large crumbs. Add the water and continue to pulse until the mixture comes together to form a sticky consistency.
    2. Transfer the mixture to an 8x8 pan lined with parchment paper and using your hands, pat down firmly until the mixture forms a smooth, even layer at the bottom of the pan.* Place the pan in the freezer for 30 minutes to allow the mixture to solidify. Remove and cut into 10 even sized rectangles.
    3. *(Optional step), add the chocolate chips to a microwaveable bowl and melt in 30 second intervals. Drizzle over the mixture.

    Notes

    Bars should be stored in an airtight container in the refrigerator and will remain fresh for 1 week.
