Tuscan chicken, seasoned to perfection and coated in a creamy, Greek yogurt, mushroom and Parmesan sauce.

Guys, I just figured out dinner plans for you, and they’re going to taste pretty spectacular!

One pan, creamy Parmesan Tuscan Chicken. Succulent chicken breasts, coated in a deliciously creamy Greek yogurt Parmesan sauce and topped with sun-dried tomatoes. This one pan meal is packed with flavors while still being gluten free and low calorie! www.itscheatdayeveryday.com

This recipe was actually inspired solely from the fact that I had a jar of sun-dried tomatoes that I had been dying to use. I usually add sun-dried tomatoes to my sandwiches, pita pockets etc. But I was craving something a little more hearty for dinner.

Speaking of hearty, I’ve come to realize that one of the hardest parts of maintaining a healthy lifestyle is that sometimes those hearty cravings kick in. The type of hearty cravings that demand a plate full of pasta the size of my head with 2 slices of garlic bread to wash it all down.

Nuh uh cravings…not this time. That is when a good old creamy, Parmesan Greek yogurt sauce toooootally saved me from that list of weight gain regrets just waiting to happen.

This Parmesan Tuscan Chicken is literally packed with flavor in every little bite. From the perfectly seasoned chicken breasts, to the creamy mushrooms coated in cheesy sauce, all mixed in with those bursts of flavor from the sun-dried tomatoes – your taste buds are far from lacking here.

The absolute best best best part about it all is that your appetite will be satisfied without you risking the chances of feeling bloated and just plain..bleh, the same way that a heavy sauce might make you feel.

Oh, did I mention that it is all done in one pan? Did I skip that part out? The part where you literally only have to wash one pan and one spatula?

This sauce is thickened using cornstarch, making this Parmesan Tuscan Chicken gluten free friendly sooo bonus for that! I decided to serve it up for my family on a bed of brown rice which was perf. However, this would definitely taste just as amazing served with quinoa, CAULIFLOWER RICE 🙂 or a salad! Nom away, my friends!

Ingredients

  • 1 lb chicken breasts
  • 1 tbs vegetable oil spread
  • 8 oz sliced baby Bella mushrooms
  • 4 cloves garlic, minced
  • 1 1/2 cups almond milk
  • 1/2 cup nonfat Greek yogurt
  • 1 tbs cornstarch + 2 tbs water
  • 1 tbs garlic powder
  • 1/4 cup shaved Parmesan cheese
  • 1/4 cup sun-dried tomatoes
  • salt and pepper to taste
  • parsley (optional garnish)

Instructions

  1. Spray medium nonstick skillet and turn on the heat to medium-high. Add the chicken breasts to the skillet, season with salt and pepper and cook all the way through, approx 8-10 minutes on each side. Transfer the chicken breasts to a plate.
  2. Melt the vegetable oil spread in the skillet and then add the garlic and mushrooms. Cook until the mushrooms are browned and tender. Add the almond milk, Greek yogurt, garlic powder, salt and pepper and Parmesan cheese. Whisk occasionally until the cheese has fully melted and the sauce begins to boil. Mix the cornstarch with the water to create a slurry and whisk into the sauce. Once the sauce begins to boil and thicken, reduce the heat to low and add the chicken back to the skillet along with the sun-dried tomatoes. Simmer until the chicken is warm, approx 5 minutes.

Notes

This creamy chicken is delicious served alone or on top of brown rice or quinoa. It will also make a delicious addition to any salad!

If you find the sauce to be a little too thick, simply add a little more almond milk until you have reached your desired consistency.

    What would you suggest instead of mushrooms? I'm a crazy picky eater and everything else looks good except that. I just don't want to lose the substance in my substitution.

      I did this recipe and I love mushrooms but my husband and daughter hate them. I just put the mushrooms on my plate and went without for them and it was fantastic and they loved it. It's not an overwhelming mushroom flavor. It's very subtle. The way the recipe is written it calls for the baby Bella mushrooms and in the store they come as big chunks so they're super easy to fish out You can just use a slotted spoon.

    This was so delicious! I was a little skeptical about the almond milk and Greek yogurt for the cream sauce. I made it exactly as written and i can't wait to have my leftovers for lunch! I served it over couscous for something different. Husband loved the meatiness of the whole dish. Thank you!

    Absolutely delicious 😋 My husband who hates anything "healthy " loved it. Only thing I did different was added onions and kept out the garlic powder. Fresh garlic was enough for us. Thank you for the recipe😊

      Hi Tiffany, I'm not quite sure why this happened? My only guess would be that the sauce possibly turned brown due to residue in the pan from cooking the chicken? I hope that the taste wasn't compromised by the color, though! 😊

    I don't know what I did wrong but I followed the recipe exactly like it says and my sauce did not turn out! It like completely separated and the cheese just clumped up together.

      Hmm, that's really strange? Did you cook on very high heat or maybe over stir the mixture as it was cooking? It's good to cook this sauce on medium heat to allow the cheese to gradually melt into the sauce. Sorry it didn't work out for you, Jacquelyn!
