    One thing that I particularly love about this recipe is that it doesn't use anything out of the ordinary in order for it to be healthier.

    When I began this blog, I decided to make it my ultimate goal to provide recipes that promote a healthier lifestyle and can aid in weight loss without people having to go out and literally do an entire pantry makeover.

    I'm not sure if this goes for everyone but for myself in particular, one of the most discouraging things that I've faced in the past when it came to trying to eat healthier was that a majority of the recipes that I found demanded a great deal of ingredients that I didn't have....better yet, had never even heard of.

    I would literally go from recipe to recipe, noting down ingredients that I would have to buy, and sadly after adding it all up, had to skip out because I just couldn't justify buying over $40 worth of specialized ingredients that I had no idea if I would even use again.

    Sorry guys, but this college kiddo does not have the bucks for that.

    I have however, grown to love a handful of healthy ingredients that I think are very reasonably priced and ABSOLUTELY worth every penny. One of those is PB Fit Powder, aka THE BEST THING EVER.

    For those of you that aren't familiar with PB Fit powder, it's basically powder made from roasted peanuts, where a vast majority of the oil is extracted.

    Because of this, a huge chunk of those calories are extracted also without the taste being significantly different to organic peanut butter. 2 tbs of PB fit powder add up to a mere 50 calories, whereas 2 tbs of regular peanut butter rack up at around 200.

    For those of you that are very calorie conscious, this is a HUGE deal! Bye bye cals....you won't be missed 🙂

    I love PB Fit powder for its versatility. In addition to being an awesome ingredient in these Skinny Dark Chocolate PB Cups, it can be used in so many other recipes, including:

    Skinny Dark Chocolate PB Cups

    Ingredients

    • 1 cup PB Fit Powder
    • 1 cup water
    • ¾ cup dark chocolate chips
    • ¼ cup almond milk (room temperature)

    Instructions

    1. Line a mini cupcake pan with mini cupcake liners. Add the dark chocolate chips to a microwave safe bowl and microwave in 15 second intervals until fully melted. Gently stir in the almond milk until you have a creamy, chocolate ganache consistency. Separate the chocolate mixture into two separate batches. Using the first batch, distribute the mixture evenly among the cupcake liners. Place pan in the freezer for a few minutes to help the ganache to solidify a little.
    2. Combine the PB fit powder and water until you have a creamy peanut butter texture (the texture will be slightly runnier than regular peanut butter which is fine. This makes it easier to pour into the cupcake liners and it will still solidify once frozen). Pour the peanut butter into each of the cupcake liners to create another layer on top of the solid chocolate. Return to the freezer for approx 30 minutes to allow the peanut butter layer to solidify.
    3. Finally, add the second batch of melted chocolate to the cupcake liners and return to the freezer until the peanut butter cups are fully frozen. All done!

    Notes

    For a vegan version, simply opt for vegan chocolate chips.

    These should be stored in an airtight container or Ziploc bag in the freezer. Because chocolate ganache is naturally creamier than regular chocolate, this will prevent the cups from melting.

      Seriously SO stinkin' good!!!! Especially when you're restricted on what you can eat!! I don't feel guilty for having a little sweet treat! And if I have 2, I don't have a cloud hanging over my head the rest of the day. 😁 I did lessen the water which seemed to work well. I'm contemplating subbing coconut milk for the water next time and subbing the chocolate chips for chocolate with little to no sugar. 🤔 You could do so many variations with this recipe!!!!! The only tip I would say is when you add the top layer of ganache, spread it out right away, otherwise the frozen pb layer makes it harden quickly. 😆 It didn't bother me one bit though! They are the prefect summer sweet treat!! (Heck summer, winter, spring, or fall. They'll be good year round!) I shared with my sister RIGHT away!! Thank you for this recipe!! I can't wait to try your others!!!!

      I love the taste of these treats but the texture made them difficult to eat. I added a couple extra tablespoons of PBfit powder because the 1:1 ratio made the peanut butter very thin. After being frozen the PB was very icy and difficult to eat, but once thawed the peanut butter was runny and messy. Do you think real peanut butter might be a better fit because it retains the natural oils in peanut butter and may freeze softer? Thanks for the recipes, I look forward to trying more!

        Hi Kara, I'm sorry that the texture didn't work out for you :( It's certainly a little different from the traditional peanut butter cups and this is mainly due to the fact that they need to remain frozen. I definitely think that regular peanut butter will give these cups the texture you're looking for - which shouldn't be a problem if you're not counting calories!! :-)

        Almond butter would be an excellent substitute! This would however, increase the calories so that would be important to consider if you're tracking them :)

      I made these tonight and they did not work. Once they were frozen, the PB became icy. I let them sit out a little to see if the texture would improve and they just became a liquid mess. I'm sad! What did I do wrong?!

        I'm sorry to hear they didn't work out for you, Stacy! They PB definitely shouldn't become icy. Next time, I would consider maybe reducing the amount of water that you used to mix with the PB powder? Maybe it will work better for you if the PB is a thicker consistency?

        There are 7g carbs and 4.4g sugar per serving. This is the information that I got when I entered the ingredients on myfitnesspal. 😊

      I've got the peanut butter layer freezing right now! I didn't use a mini cupcake tray I just used a regular sized one and ended up with about 7 good sized cups! What kind of chocolate chips did you use in your recipe?

      Awesome blog! Love this recipe because it is so easy and so few ingredients!! Do these need to be kept refrigerated or kept in the freezer after they are frozen? Or are they okay at room temperature?
