I feel like this recipe has been long awaited. Long awaited for many reasons. 1) Because I feel so greedy to have been keeping such a mouthwatering recipe in the dark for so long. 2) Because I’ve made it pretty clear once or 5 times that cheesecake is pretty much my favorite dessert on the entire face of the earth. Well, not pretty much, it IS my favorite dessert that ever lived (cheesecakes have lives?!).
As I’ve stated before, the one thing that sucks about cheesecake being my favorite dessert is the fact that once slice can add up to a bazillion calories. Literally. As delicious as it is, I just can’t deal with the guilt that almost immediately sets in as I take my last bite. But does it really have to be like that? Nope guys, nope it doesn’t at all.
Enter: Skinny Mini PB Oreo Cheesecakes at 61 calories per serving. These my friends, are little bites of heaven.
One of the biggest lessons that I’ve taken away from taking on a healthier lifestyle is that it’s not about missing out. It’s all about adapting. Yes, you can totally have pizza, pasta, cake, ice cream, cookies, CHEESECAKE – but in healthier forms. If you’re willing to work a way around substituting the bulk of the unhealthy ingredients found in most standard recipes for healthier foods, you can totally make it work. Not just make it work, you can absolutely succeed in living a sustainable healthy lifestyle. The best part is I’ve found that a majority of the low calorie substitutions that I’ve tried have tasted just as good, if not even better than the regular, higher calorie recipes.
These Skinny Mini PB Oreo Cheesecakes are a perfect example – your taste buds literally will not miss out on anything. They’re nomtastic.
A few of the substitutions that I made for this cheesecake recipe were that I replaced about half of the amount of cream cheese for fat free Greek yogurt. This was a perfect way to cut back on a bulk of the calories but still maintain that creamy, melt in your mouth texture. Also, instead of using regular peanut butter which racks up to 200 calories for 2 tablespoons, I used my all time fave PB Fit Powder which is a mere 110 calories for the entire ¼ cup. Winner winner.
What I also love about these cheesecakes are that they are the perfect individually sized portions to serve at any event. A tray full of these set out at a party is sure to be a crowd pleaser.
Oh, and we can’t forget that deliciously creamy Low Calorie Peanut Butter Topping oozing down the sides of those cheesecakes. It’s totally optional but definitely recommended.
