You know, some days you just have to chow down a big ol' juicy burger with all that cheese and grease dripping off the sides...and that's okay.
But what if you're just looking for a healthier substitute that will still kick those cravings in the butt? Cue: Sweet Potato Black Bean Burgers *praise hands*
Think of these burgers as something that are just as delicious, but won't leave you feeling bloated, sluggish and terrified to step four feet near a scale for the next few days.
In other words: think of them as burgers with all the pros.... and no cons!
The great thing about this recipe is that it's super easy to make and did I mention delicious? It's delicious.
I usually make a batch of these with the intentions of freezing the rest for later but my family always gets to gobbling them down before I get a chance (which is totally fine I mean, I can't exactly blame them).
At only 182 calories per burger including the sandwich thins (yep, you read that right), they go so well paired with a side salad for a nice filling lunch or with some homemade sweet potato fries to make it the perfect dinner!
*Quick fun fact about me: I literally have to eat sauce with everything. I don't know what it is but I just feel like most foods without sauce are too dry and I just keep chewin' and chewin'.
The problem with many sauces however, is that they tend to pack in those sneaky calories. It's so easy to rank up those cals in sauce alone without even trying to (at least for me it is).
I mean...I almost fell off my chair once I actually calculated how many calories I used to consume in just the Chick Fil A sauce. It was like I was eating an extra medium fries with my combo!
For a lighter sauce option, I looooove this super easy Greek Yogurt Sriracha dip (you'll be seeing it in a lot of my recipes). It goes so well with tons of different foods including these yummy burgers!
Sweet Potato Black Bean Burgers

Vegetarian burgers made with sweet potatoes, black beans and corn.
Ingredients
- 12 Sandwich Thins
- 2 Cups Cooked Black Beans (or 15.25 oz can; drained and rinsed)
- 2 Cups Cooked Sweetcorn (or 15.25 oz can, drained)
- 1 Medium Sweet Potato
- 1 Cup Panko Breadcrumbs
- ½ Cup Chopped Cilantro
- 1 Egg
- Juice of ½ Lime
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- ½ teaspoon Paprika
- ½ teaspoon Garlic Powder
- Optional Sriracha Greek Yogurt Dip:
- 1 Cup Greek Yogurt
- 1 ½ Tbs Sriracha
Instructions
- Preheat oven to 425 degrees. Peel and dice sweet potato and boil on stove until soft; approx 12 minutes.
- In a food processor, add 1 cup black beans, 1 cup sweetcorn, breadcrumbs, egg, lime juice, cilantro, salt, black pepper and garlic powder. Pulse until cilantro is finely chopped.
- Transfer mixture to a bowl and add remaining cup of corn and cup of beans. In a separate bowl, mash sweet potato and add to mixture. Gently fold until fully incorporated.
- Using your hands, divide mixture evenly into 8 medium sized patties and lay out on lightly oiled baking sheet.
- Bake for 6 mins on one side, carefully flip over, then bake for 6 more minutes on the other side. Place between lightly toasted sandwich thins.
Notes
For optional toppings, add ¼ sliced avocado and drizzle with Greek yogurt Sriracha dip to give them that extra kick. Nom away!
