Breakfast food has to hands down my FAVE meal of the day. I'm not sure if it's because it's the first meal that I get to stuff my face with moments after I wake up? Or maybe it's because anything with eggs, turkey bacon and CHEESE is just guaranteed to be a good time.
To be totes honest, I'm not really sure if I can pinpoint one solid reason. All that I DO know, is that these Skinny Bacon Mozzarella Breakfast Melts sent me right into my happy place.

I got into nursing school!!!
All of the sleepless nights, emotional breakdowns, Starbucks driven - sleep deprived days all suddenly seemed so worth it the moment I opened up that acceptance letter. Words can't describe how happy I am knowing that I'm one step closer to living my dream.
The road to becoming a pediatric nurse practitioner doesn't seem so daunting and endless after all 🙂
Although I don't officially start until May 15th, I've been taking some time to do some prepping and just sort of organize my life. Because, you know...it can get a little cray.
Some of the major things that I have been focusing on are quick, easy (and most importantly healthy) make-ahead recipes that'll sustain me through the long days of clinicals to avoid feeling pressured to buy fast food on impulse.
