Breakfast food has to hands down my FAVE meal of the day. I’m not sure if it’s because it’s the first meal that I get to stuff my face with moments after I wake up? Or maybe it’s because anything with eggs, turkey bacon and CHEESE is just guaranteed to be a good time.

To be totes honest, I’m not really sure if I can pinpoint one solid reason. All that I DO know, is that these Skinny Bacon Mozzarella Breakfast Melts sent me right into my happy place.

Speaking of happy places, I have some super awesome news that I’ve been dying to share with you all for over a week now (I don’t even know how I’ve held it in for that long!!!) Buuuuut….

I got into nursing school!!!

All of the sleepless nights, emotional breakdowns, Starbucks driven – sleep deprived days all suddenly seemed so worth it the moment I opened up that acceptance letter. Words can’t describe how happy I am knowing that I’m one step closer to living my dream.

The road to becoming a pediatric nurse practitioner doesn’t seem so daunting and endless after all 🙂

Although I don’t officially start until May 15th, I’ve been taking some time to do some prepping and just sort of organize my life.  Because, you know…it can get a little cray.

Some of the major things that I have been focusing on are quick, easy (and most importantly healthy) make-ahead recipes that’ll sustain me through the long days of clinicals to avoid feeling pressured to buy fast food on impulse. These Skinny Mozzarella Bacon Breakfast Melts really fit the bill because they can be made in large batches and stored in the freezer for later.

Ingredients

  • 2 sandwich thins
  • 5 egg whites
  • Turkey bacon, 2 strips
  • 1/2 tomato, diced
  • 1/4 cup mozzarella cheese, shredded
  • 1 tsp almond milk
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder (optional)

Instructions

  1. Preheat oven to 375 degrees F. In a small bowl, combine the egg whites, almond milk, salt, pepper and garlic powder. Pour into a preheated medium nonstick skillet and cook, constantly breaking up the egg to scramble.
  2. Place the turkey bacon on a microwave safe plate lined with a paper towel. Microwave on medium for approx 1 1/2 -2 minutes - the strips should be slightly crispy on the edges. Allow the bacon to cool then break it up and add it to a medium bowl along with the scrambled egg whites, diced tomatoes and mozzarella cheese. Use a spoon or a fork to combine the ingredients thoroughly.
  3. Separate the sandwich thins and line them up on a baking tray. Divide the mixture among the sandwich thins and place in the oven for 8-10 minutes or until the cheese has fully melted and the thins are slightly crispy. Enjoy!

Notes

Freezer tip: If you wish to store these in the freezer, be sure to allow the breakfast thins to cool thoroughly first. Wrap them in either aluminum foil or cling wrap and then place in a Ziploc bag. When ready to eat, remove the frozen breakfast melt from the wrapping and wrap loosely in a paper towel. Microwave on high for 1 1/2 - 2 minutes
